Molten Chocolate Snack Cake with Gooey Fudge Pockets

There’s something about pulling a pan of chocolate cake out of the oven and finding the top still shiny with melted chocolate, no ramekins, no fuss, just one pan and a spoon. Molten chocolate snack cake is that cake, a fudgy one-bowl cake studded with chocolate chunks that turn into gooey pockets as it bakes.

I started making this after one too many failed individual lava cakes, the kind that either overflow or bake solid before you can flip them out. This version skips the ramekin dance entirely. You mix everything in one bowl, pour it into a square pan, and let the chocolate chunks do the molten work instead of underbaking the whole cake.

The edges turn chewy and brownie-like while the chocolate chunks on top melt into small pools by the 22 to 24 minute mark. Cut it warm and you get a fudgy crumb, not unlike old fashioned cocoa fudge, with soft bursts of melted chocolate in almost every bite.

It’s a weeknight dessert, not a dinner-party centerpiece. That’s exactly the point.

Why You’ll Love This Recipe

  • One bowl, no mixer, no ramekins needed
  • Chocolate chunks melt into gooey pockets naturally
  • Ready in under 45 minutes start to finish
  • Cuts into neat squares for easy sharing

Ingredient Notes

  • Unsalted butter: Melted butter keeps the crumb fudgy instead of cakey. Neutral oil works in a pinch but the edges won’t crisp up the same way.
  • Chocolate bar, chopped: Use a bar you’d eat on its own, chopped unevenly so you get both small melted flecks and bigger molten pockets. Chips work too but hold their shape more and ooze less.
  • Unsweetened cocoa powder: Dutch process gives a deeper color and mellow flavor. Natural cocoa works fine but tastes a bit sharper.
  • Light brown sugar: Adds moisture and a faint caramel note next to the granulated sugar. Dark brown sugar deepens that flavor further.
  • Eggs: Room temperature eggs blend smoothly into the melted butter. Cold eggs can seize the butter and leave lumps.

Ingredients Method Notes

Ingredients

  • 115 g unsalted butter, melted and slightly cooled (1/2 cup)
  • 150 g granulated sugar (3/4 cup)
  • 30 g light brown sugar, packed (2 tbsp)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 130 g all-purpose flour (1 cup)
  • 35 g unsweetened cocoa powder (1/3 cup); dutch process preferred
  • 1/2 tsp baking powder
  • 1/4 tsp fine salt
  • 140 g semisweet chocolate bar, chopped into chunks, divided
  • flaky sea salt, for topping optional

Method

  1. Heat oven to 175 C / 350 F. Grease an 8-inch square pan and line with parchment, leaving an overhang on two sides.
  2. Whisk melted butter, granulated sugar, and brown sugar in a large bowl until smooth, about 30 seconds.
  3. Whisk in eggs and vanilla extract until the batter turns glossy and lightens slightly in color.
  4. Sift in flour, cocoa powder, baking powder, and salt. Fold with a spatula just until no dry streaks remain, don't overmix.
  5. Fold in two-thirds of the chopped chocolate chunks. Pour batter into the prepared pan and spread into an even layer.
  6. Scatter the remaining chocolate chunks over the top, pressing a few in gently so they poke through the batter.
  7. Bake for 22 to 24 minutes, until the edges look set and puffed but the center still jiggles slightly when the pan is nudged.
  8. Cool in the pan for 5 minutes only, then lift out using the parchment and slice into 9 squares while the top chocolate is still molten. Serve warm.

Notes

  • Use a bar you'd eat on its own, cheap chocolate chunks turn waxy once melted.
  • Don't overmix once flour goes in, the crumb turns tough instead of fudgy.
  • Check doneness at 20 minutes the first time you bake this in your oven.
  • Parchment overhang makes lifting the whole cake out of the pan much easier.

Tips for Success

  • Chop chocolate by hand instead of using chips so you get both small melted specks and big gooey pockets.
  • Pull the cake at 22 minutes if your oven runs hot, the center should still jiggle slightly when nudged.
  • Line the pan with parchment paper so you can lift the whole cake out before slicing into squares.
  • Slice while the top chocolate is still warm and soft, it firms up and gets harder to cut cleanly.
  • Weigh the flour and cocoa instead of scooping with cups, packed flour makes the cake dense instead of fudgy.

Variations

  • Swap half the chocolate chunks for chopped white chocolate for a marbled look across the top.
  • Stir 1/2 tsp espresso powder into the batter to deepen the chocolate flavor without adding coffee taste.
  • Press a few raspberries into the batter before baking for a tart contrast against the molten pockets.

Storage and Reheating

Molten chocolate snack cake keeps well at room temperature for up to 2 days in an airtight container, though the chocolate pockets firm back up once fully cooled.

For longer storage, refrigerate squares for up to 5 days. The texture turns denser and more fudge-like when cold, which some people prefer for snacking straight from the fridge.

To bring back the gooey center, microwave a square for 12 to 15 seconds on medium power. Don’t reheat the whole pan at once, individual squares heat more evenly and won’t dry out at the edges.

Serving Suggestions

Molten chocolate snack cake works best warm, straight from the pan, with a scoop of vanilla ice cream melting into the chocolate pockets.

A splash of cold milk or a shot of espresso on the side cuts through the richness. For breakfast leftovers, which happens more often than I’d admit, a plain cup of coffee is enough.

Dust with powdered sugar or a pinch of flaky salt right before serving if you want a little contrast against the sweetness.

FAQ

Why did my molten chocolate snack cake bake solid instead of staying gooey in the middle?

This usually means it stayed in the oven too long or your oven runs hot. Pull it at 22 to 24 minutes when the edges look set but the center still jiggles slightly, and the chocolate chunks on top look melted rather than hardened. Every oven varies by a few minutes, so start checking at 20.

Can I use chocolate chips instead of a chopped chocolate bar for this snack cake?

You can, but chunks from a chopped bar melt into bigger, gooier pockets while chips tend to hold their shape and stay more solid. If chips are all you have, use a mix of sizes or chop half of them roughly before folding into the batter.

How long does molten chocolate snack cake keep and can I reheat leftover squares?

It keeps at room temperature in an airtight container for up to 2 days, or in the fridge for up to 5 days. Microwave a single square for 12 to 15 seconds on medium power to loosen the chocolate pockets again before eating.

What goes well with a warm slice of molten chocolate snack cake?

Vanilla ice cream is the classic match, since it melts into the warm chocolate pockets on contact. Cold milk, espresso, or a dusting of powdered sugar all work too if you want something simpler.

Is molten chocolate snack cake gluten free or can I make it dairy free?

As written it isn’t, since it uses all-purpose flour and butter. Swap in a 1:1 gluten-free flour blend for the flour, and use dairy-free butter plus a dairy-free chocolate bar to make it dairy free, though the crumb turns slightly softer.

What’s the difference between this snack cake and a classic individual chocolate lava cake?

A lava cake bakes in individual ramekins and relies on an underbaked center to stay liquid, so timing is tight and it can collapse. This snack cake bakes in one pan and gets its molten texture from melted chocolate chunks instead, so it’s more forgiving and doesn’t need to be flipped out.
