Method
Prep the Ricotta and Chocolate
- Line a fine-mesh sieve with cheesecloth and set it over a bowl. Add the ricotta and let it drain in the fridge for at least 1 hour, or overnight, to remove excess whey.
- Melt the chopped chocolate in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth and no warmer than 45 C / 113 F. Let it cool for 5 minutes.
Whip and Chill the Mousse
- Transfer the drained ricotta to a food processor. Blend for 1 to 2 minutes, scraping down the sides once, until completely smooth with no lumps.
- Add the cooled melted chocolate, cocoa powder, honey, vanilla, and salt. Blend for 1 minute more until the mousse is glossy and streak-free.
- Scrape the mousse into a bowl or individual glasses, cover, and chill for at least 30 minutes until firm enough to hold its shape.
- Serve cold, topped with shaved chocolate or fresh raspberries if you like.
Notes
- Room-temperature ricotta blends smoother than cold ricotta straight from the fridge.
- Do not overheat the chocolate past about 45 C / 113 F.
- Mousse thickens more after chilling, so don't judge texture right out of the processor.
- Use a food processor over a hand mixer for the smoothest ricotta texture.
