Watermelon Granita Recipe

This fresh watermelon granita is a light, icy dessert that’s perfect for summer. Made with sweet watermelon, a splash of lime, and just enough sugar, it’s simple, refreshing, and full of flavor.

Ingredients
  

  • 4 cups fresh watermelon cubed and seeds removed
  • 1/4 cup sugar adjust to taste
  • Juice of 1 lime
  • 4 –5 fresh mint leaves optional, for a minty twist

Method
 

  1. Prep the watermelon – Cut the watermelon into chunks. Remove any seeds. Measure about 4 cups.
  2. Blend – Add watermelon, sugar, lime juice, and mint (if using) to a blender. Blend until smooth and liquid.
  3. Freeze – Pour the mixture into a shallow baking dish. Place in the freezer for 1 hour.
  4. Scrape – After an hour, use a fork to scrape the mixture into icy crystals. Return to the freezer.
  5. Repeat – Continue scraping every 30–45 minutes for about 3 hours, until fluffy and icy.
  6. Serve – Spoon into chilled glasses. Garnish with mint leaves or a wedge of watermelon.

Notes

  • Using ripe, sweet watermelon will give you the best flavor without needing much sugar.
  • You can swap lime juice for lemon for a different tang.
  • If your granita freezes too solid, let it sit out for 5 minutes before scraping.
