Ingredients
  

For the pudding:
  • 1 cup dried figs chopped
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts
For the toffee sauce:
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Soak the figs: Put chopped figs in a bowl, pour over boiling water, and add baking soda. Let them soak while prepping the rest.
  2. Cream butter and sugar: Beat butter and brown sugar together until fluffy. Add eggs one at a time, then vanilla.
  3. Mix dry ingredients: Combine flour, baking powder, and salt. Fold into butter mixture. Stir in soaked figs with liquid and walnuts.
  4. Bake: Preheat oven to 350°F (175°C). Grease a baking dish or line with parchment paper. Pour in batter and bake 35–40 minutes. Toothpick should come out clean.
  5. Make toffee sauce: In a saucepan, combine cream, butter, brown sugar, and salt. Cook over medium heat until thickened. Stir in vanilla.
  6. Serve: Pour sauce over warm pudding. Optionally garnish with extra figs or walnuts. Enjoy!

  • Serve warm for best flavor.
  • Can be made in individual ramekins for a fancy look.
