Soak the figs: Put chopped figs in a bowl, pour over boiling water, and add baking soda. Let them soak while prepping the rest.
Cream butter and sugar: Beat butter and brown sugar together until fluffy. Add eggs one at a time, then vanilla.
Mix dry ingredients: Combine flour, baking powder, and salt. Fold into butter mixture. Stir in soaked figs with liquid and walnuts.
Bake: Preheat oven to 350°F (175°C). Grease a baking dish or line with parchment paper. Pour in batter and bake 35–40 minutes. Toothpick should come out clean.
Make toffee sauce: In a saucepan, combine cream, butter, brown sugar, and salt. Cook over medium heat until thickened. Stir in vanilla.
Serve: Pour sauce over warm pudding. Optionally garnish with extra figs or walnuts. Enjoy!
