Ingredients
  

  • 1/2 cup short-grain rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt optional
  • 1/2 teaspoon mastic crushed (optional)
  • Ground cinnamon for garnish

Method
 

  1. Rinse the rice: Place rice in a fine-mesh sieve and rinse under cold water until water runs clear.
  2. Cook the rice: In a medium saucepan, add rice and 1 cup water. Cook over medium heat until rice is tender and water is absorbed.
  3. Add milk: Pour in milk and gently simmer over medium-low heat. Stir often to prevent the milk from sticking.
  4. Sweeten the pudding: Mix sugar and cornstarch in a small bowl. Slowly whisk into the milk and rice mixture. Continue cooking until the mixture thickens slightly.
  5. Flavor it: Stir in vanilla extract and crushed mastic, if using. Taste and adjust sweetness.
  6. Prepare to bake: Pour the pudding into oven-safe ramekins or a baking dish.
  7. Bake: Preheat oven to 350°F (175°C) and bake for 25–30 minutes, until the tops are lightly golden.
  8. Cool and serve: Let it cool slightly. Sprinkle cinnamon on top before serving. Serve warm or chilled.

Notes

  • Use short-grain rice for a creamy texture.
  • Baking adds a nice golden crust but stovetop-only version is fine.
  • Mastic is optional but gives authentic flavor.
  • Store leftovers in the fridge up to 3–4 days.
