Strawberry Basil Popsicles

Sweet, juicy strawberries meet fresh, fragrant basil in these homemade popsicles. They’re light, refreshing, and perfect for cooling down on a hot summer day.

Ingredients
  

For the Popsicles:
  • 2 cups fresh strawberries hulled (or thawed frozen strawberries)
  • ½ cup basil simple syrup see below
  • 2 tablespoons fresh lemon juice
Optional: ½ cup plain or vanilla yogurt (for a creamy version)
  • For the Basil Simple Syrup:
  • ½ cup sugar
  • ½ cup water
  • ½ cup fresh basil leaves

Method
 

Step 1 – Make the Basil Simple Syrup
  1. In a small saucepan, combine sugar and water.
  2. Heat over medium, stirring until the sugar dissolves.
  3. Add basil leaves and let it simmer for 2–3 minutes.
  4. Remove from heat and steep for 10–15 minutes.
  5. Strain out basil leaves and let the syrup cool completely.
Step 2 – Blend the Popsicle Mixture
  1. Add strawberries, cooled basil syrup, and lemon juice to a blender.
  2. Blend until smooth.
  3. If making creamy popsicles, add yogurt and blend just until combined.
Step 3 – Fill and Freeze
  1. Pour mixture into popsicle molds, leaving a little space at the top.
  2. Insert sticks and freeze for at least 4–6 hours, or until fully solid.
Step 4 – Unmold and Serve
  1. Run warm water over the outside of the molds for a few seconds.
  2. Gently pull the popsicles out.
  3. Serve immediately or store in the freezer.

Notes

  • Taste the mixture before freezing. Adjust sweetness or tartness to your liking.
  • Fresh strawberries give the best flavor, but frozen works well in a pinch.
  • For a fancier look, add thin strawberry slices inside the mold before pouring the mixture.
  • Basil simple syrup can be made ahead and stored in the fridge for up to 1 week.
