Ingredients

  • 6 plain or chocolate rice cakes
  • ½ cup frosting vanilla or chocolate
  • 2 tbsp peanut butter optional
  • Candy eyeballs about 12
  • ¼ cup rainbow sprinkles
  • ¼ cup mini chocolate chips
  • 6 pretzel sticks for horns or arms
  • 1 banana sliced
  • 4 strawberries sliced

Method

  1. Place rice cakes on a clean tray or plate.
  2. Spread frosting or peanut butter evenly on each rice cake.
  3. Stick on candy eyeballs — one, two, or more depending on your monster design.
  4. Add sprinkles as hair, pretzels as horns, and chocolate chips as teeth.
  5. Use banana or strawberry slices to make tongues, ears, or extra monster details.
  6. Serve immediately for best crunch and flavor.

Notes

  • These are best eaten right away so the rice cakes stay crunchy.
  • If you don’t have candy eyeballs, chocolate chips or raisins can work just as well.
  • Kids love decorating their own monsters, so make it a fun activity rather than a perfect recipe.
