Ingredients
  

  • 1 cup natural peanut butter unsweetened
  • 1/3 cup honey or maple syrup
  • 1/2 cup chocolate protein powder
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp vanilla extract
  • Pinch of sea salt
  • 1/3 cup mini dark chocolate chips
  • 2 tbsp oat flour or almond flour optional, for texture
Optional coatings:
  • Crushed peanuts
  • Coconut flakes

Method
 

Mix the wet ingredients
  1. In a large bowl, mix together the peanut butter and honey until smooth and creamy. Add vanilla and a pinch of salt.
Add the dry ingredients
  1. Stir in the chocolate protein powder and cocoa powder. Mix until fully combined. If the dough feels sticky, add oat flour one spoon at a time until it firms up.
Add chocolate chips
  1. Fold in the mini chocolate chips. Mix gently to spread them evenly through the dough.
Roll into balls
  1. Scoop out a tablespoon of dough and roll into small balls using your hands. You should get about 14–16 truffles.
Chill
  1. Place the truffles on a plate or tray and chill in the fridge for 15–20 minutes until they set.
Coat (optional)
  1. If you want, roll them in crushed peanuts or coconut flakes for a fun texture.
