Ingredients
  

  • 1 cup honey
  • 1/2 cup sugar
  • 1/2 cup butter
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
Optional: powdered sugar or icing for decoration

Method
 

Prepare the wet mixture
  1. In a small saucepan, melt honey, sugar, and butter over low heat. Stir until smooth. Let it cool slightly.
Mix dry ingredients
  1. In a large bowl, combine flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
Make the dough
  1. Slowly pour the warm honey mixture into the dry ingredients. Mix until a soft dough forms.
Chill the dough
  1. Wrap the dough in plastic wrap and refrigerate for at least 1 hour. This makes it easier to roll out.
Roll and shape cookies
  1. Preheat oven to 350°F (175°C). Roll dough to about 1/4-inch thickness. Cut into shapes with cookie cutters.
Bake
  1. Place cookies on a parchment-lined tray, about 1 inch apart. Bake for 10–12 minutes. Cookies should be slightly soft in the center.
Decorate (optional)
  1. Once cooled, dust with powdered sugar or decorate with icing.

Notes

Dough gets better with time; store in airtight container for a few days. Soft cookies are ideal; slightly underbaking is okay. Honey choice affects flavor—dark honey works best.
