Pecan Pie Bars

These pecan pie bars taste just like classic pecan pie but are so much easier to make! With a buttery crust, rich caramel-like filling, and crunchy pecans, they’re perfect for holidays, potlucks, or a sweet treat any time.

Ingredients
  

For the Crust:
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 cup unsalted butter softened
  • ¼ teaspoon salt
For the Filling:
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 2 cups chopped pecans

Method
 

Preheat & Prepare the Pan
  1. Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving a little overhang on the sides for easy removal later.
Make the Crust
  1. In a bowl, combine flour, sugar, and salt. Add softened butter and mix using your hands or a pastry cutter until the mixture looks crumbly.
  2. Press this mixture evenly into the prepared pan and bake for 18–20 minutes until lightly golden.
Make the Filling
  1. In a separate bowl, whisk together eggs, corn syrup, brown sugar, melted butter, and vanilla extract until smooth. Stir in the chopped pecans.
Pour & Bake
  1. Pour the filling evenly over the warm crust.
  2. Return the pan to the oven and bake for 25–30 minutes, until the top looks set and shiny.
Cool & Slice
  1. Let the bars cool completely in the pan. Once cooled, lift them out using the parchment paper, place them on a cutting board, and cut into squares or bars.

Notes

  • Let the bars cool fully before slicing — this helps the filling set perfectly.
  • Fresh pecans make a big difference in flavor.
  • These bars can be stored in an airtight container for up to 3 days at room temperature or 1 week in the fridge.
  • You can freeze them for up to 2 months — just wrap tightly in plastic and thaw before serving.
  • Want a twist? Add a drizzle of dark chocolate or a sprinkle of sea salt on top before serving.
