Method
- Preheat the Oven – Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Prepare the Dough – In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth and well combined.
- Form the Cookies – Scoop tablespoon-sized amounts of dough and roll them into balls. Place them on the prepared baking sheet about 2 inches apart.
- Create Thumbprints – Using your thumb or the back of a teaspoon, make an indentation in the center of each cookie ball.
- Fill with Jelly – Spoon a small amount of jelly or jam into each indentation, being careful not to overfill.
- Bake – Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
