  • 1 cup Greek yogurt plain or vanilla
  • 1 tablespoon honey or maple syrup
  • 2 ripe peaches sliced thin (or 1 cup canned peach slices, drained)
  • ½ teaspoon lemon juice optional, for freshness
  • ¾ cup crunchy granola
  • A pinch of chia seeds or crushed nuts optional
  • Fresh mint leaves for garnish

Method
 

Step 1 – Prep the Peaches:
  1. Wash, slice, and pit the peaches. If using fresh ones, toss them lightly with lemon juice. For canned peaches, drain them well to avoid extra moisture.
Step 2 – Sweeten the Yogurt:
  1. In a small bowl, mix Greek yogurt with honey or maple syrup. Stir until smooth and creamy. Taste and adjust sweetness if needed.
Step 3 – Layer the Parfait:
  1. In a clear glass or jar, add a spoonful of yogurt at the bottom. Next, add a few peach slices and a small handful of granola. Repeat the layers until the glass is full.
Step 4 – Add the Finishing Touches:
  1. Top with a few more peach slices, a drizzle of honey, and a sprinkle of granola or chia seeds. Garnish with mint leaves for a pop of color.
Step 5 – Serve or Chill:
  1. Serve right away for a crunchy bite or refrigerate for about 30 minutes if you prefer softer granola.

Notes

  • For a vegan version, use coconut yogurt and agave syrup.
  • If you prep ahead, store yogurt and peaches in jars and add granola only before eating to keep it crisp.
  • This parfait also works great with other fruits like mangoes or berries.
