Step 1 – Prep the Peaches:
- Wash, slice, and pit the peaches. If using fresh ones, toss them lightly with lemon juice. For canned peaches, drain them well to avoid extra moisture.
Step 2 – Sweeten the Yogurt:
- In a small bowl, mix Greek yogurt with honey or maple syrup. Stir until smooth and creamy. Taste and adjust sweetness if needed.
Step 3 – Layer the Parfait:
- In a clear glass or jar, add a spoonful of yogurt at the bottom. Next, add a few peach slices and a small handful of granola. Repeat the layers until the glass is full.
Step 4 – Add the Finishing Touches:
- Top with a few more peach slices, a drizzle of honey, and a sprinkle of granola or chia seeds. Garnish with mint leaves for a pop of color.
Step 5 – Serve or Chill:
- Serve right away for a crunchy bite or refrigerate for about 30 minutes if you prefer softer granola.
Notes
- For a vegan version, use coconut yogurt and agave syrup.
- If you prep ahead, store yogurt and peaches in jars and add granola only before eating to keep it crisp.
