Method
Crush the Oreos
- Place the Oreos in a food processor and pulse until you get fine crumbs. If you don’t have one, smash them in a zip-top bag with a rolling pin. Save 2 tablespoons of crumbs for later if using as topping.
Make the Filling
- In a mixing bowl, combine softened cream cheese and peanut butter. Stir until smooth. Add in the Oreo crumbs and mix until you have a thick, dough-like mixture.
Shape into Bites
- Scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands. Place each bite on a parchment-lined baking sheet. You should get around 18–20 balls.
Freeze to Firm
- Place the baking sheet in the freezer for 20–30 minutes until the bites are firm enough to dip in melted chocolate.
Melt the Chocolate
- Add the chocolate chips to a microwave-safe bowl. Heat in 20-second intervals, stirring each time, until fully melted and smooth.
Dip the Bites
- Using a fork or toothpick, dip each chilled bite into the melted chocolate. Let the excess drip off, then place back on the parchment paper. While the chocolate is still wet, sprinkle with reserved Oreo crumbs or sea salt if desired.
Chill Again
- Put the coated bites in the fridge for about 30 minutes until the chocolate is set. Once firm, store in an airtight container in the fridge.
Notes
- Make sure the cream cheese is softened for easy mixing.
- Don’t skip chilling—warm bites will fall apart in melted chocolate.
- You can freeze leftovers in a sealed container for up to a month. Just let them sit at room temp for 10 minutes before eating.
- Kids love helping with the rolling part—just be ready for a little mess!
