No-Bake Croatian Bajadera Squares with Dark Chocolate

Ground walnuts and crushed biscuits form two pressed layers, one plain and one cocoa, finished with a dark chocolate glaze and cut into small chilled squares.

Ingredients
  

Walnut Biscuit Base
  • 300 g walnuts, ground or hazelnuts, ground coarse, not pasty
  • 250 g plain biscuits (Petit Beurre or digestives), finely crushed fine crumbs, not powder
  • 200 g granulated sugar
  • 150 ml water add gradually, you may need slightly less or more
  • 1 tsp vanilla extract
  • 1 pinch fine salt
Cocoa Layer
  • 3 tbsp unsweetened cocoa powder
  • 2 tbsp water extra, to loosen the cocoa dough
Chocolate Glaze
  • 150 g dark chocolate, chopped 60 to 70% cocoa
  • 2 tbsp neutral oil (sunflower or grapeseed) keeps the glaze from cracking when sliced

Method
 

Mix and Press the Layers
  1. Line a 20 cm / 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy lifting later.
  2. In a large mixing bowl, stir together the ground walnuts, crushed biscuits, sugar, vanilla extract, and salt until evenly combined.
  3. Add the water a little at a time, mixing with your hands, until the mixture holds together when you squeeze a handful, like wet sand.
  4. Divide the mixture in half. Press one half firmly and evenly into the bottom of the lined pan.
  5. Mix the cocoa powder and remaining 2 tbsp water into the second half until you get a uniform dark brown dough.
  6. Press the cocoa layer on top of the plain layer, smoothing the surface with the back of a spoon. Chill for 30 minutes.
Glaze, Chill, and Cut
  1. Melt the chopped dark chocolate and oil together in a heatproof bowl set over a pan of barely simmering water, stirring until smooth and glossy, about 3 to 4 minutes.
  2. Pour the melted chocolate over the chilled base and tilt the pan so it spreads into an even layer.
  3. Refrigerate for at least 2 hours, until the glaze is set firm and the layers feel solid when pressed.
  4. Lift the whole block out using the parchment overhang. Cut into 20 small squares with a warm, sharp knife, wiping the blade clean between cuts.

Notes

  • Grind walnuts in short pulses so they stay coarse, not oily.
  • Press layers hard, a loose base crumbles when sliced.
  • Chill the plain layer before adding cocoa dough on top.
  • Let the glaze set a full 2 hours before cutting squares.
