Method
Step 1: Make the Lavender Honey
- Add honey to a small saucepan.
- Warm it over low heat. Do not boil.
- Stir in dried culinary lavender.
- Remove from heat and cover.
- Let it sit for 30 minutes.
- Strain out the lavender and set the honey aside.
Step 2: Make the Yogurt Base
- Add full fat yogurt to a mixing bowl.
- Spoon in the lavender honey.
- Add lemon zest if using.
- Add a small pinch of salt.
- Stir gently until smooth and creamy.
Step 3: Assemble
- Spoon the yogurt into small jars or glasses.
- Chill for 15–20 minutes if you prefer it cold and thicker.
- Serve as is or with a light honey drizzle on top.
Notes
- Always use culinary lavender. Decorative lavender will taste bitter.
- Start light with lavender. You can add more later, but you can’t fix too much.
- Full fat yogurt gives the best flavor and texture.
- This recipe can be made up to three days ahead and stored in the fridge.
