Ingredients
  

For the Lavender Honey
  • 1 cup mild honey clover or wildflower
  • 1 tablespoon dried culinary lavender
For the Yogurt Pot
  • 2 cups full fat yogurt
  • 3 tablespoons lavender honey from above
  • 1 teaspoon lemon zest optional
  • Small pinch of salt

Method
 

Step 1: Make the Lavender Honey
  1. Add honey to a small saucepan.
  2. Warm it over low heat. Do not boil.
  3. Stir in dried culinary lavender.
  4. Remove from heat and cover.
  5. Let it sit for 30 minutes.
  6. Strain out the lavender and set the honey aside.
Step 2: Make the Yogurt Base
  1. Add full fat yogurt to a mixing bowl.
  2. Spoon in the lavender honey.
  3. Add lemon zest if using.
  4. Add a small pinch of salt.
  5. Stir gently until smooth and creamy.
Step 3: Assemble
  1. Spoon the yogurt into small jars or glasses.
  2. Chill for 15–20 minutes if you prefer it cold and thicker.
  3. Serve as is or with a light honey drizzle on top.

Notes

  • Always use culinary lavender. Decorative lavender will taste bitter.
  • Start light with lavender. You can add more later, but you can’t fix too much.
  • Full fat yogurt gives the best flavor and texture.
  • This recipe can be made up to three days ahead and stored in the fridge.
