Ingredients
  

  • 1 cup natural peanut butter smooth
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 ½ cups rolled oats
  • ¼ cup mini chocolate chips optional but tasty
  • A pinch of salt
Optional add-ins:
  • 2 tbsp ground flaxseed or chia seeds
  • Shredded coconut
  • Chopped nuts or dried fruit

Method
 

Mix Wet Ingredients:
  1. In a mixing bowl, stir together the peanut butter, honey (or maple syrup), and vanilla until smooth.
Add Dry Ingredients:
  1. Add the oats, salt, and chocolate chips. Stir until fully combined. If you're adding any extras like flaxseed or coconut, mix them in now.
Chill the Mixture:
  1. Cover the bowl and place it in the fridge for 15–20 minutes. This helps firm up the mixture so it's easier to roll.
Roll into Balls:
  1. Scoop out about 1 tablespoon of the mixture and roll it into a ball with your hands. Repeat until all the mix is used. You should get around 18–20 balls.
Store or Serve:
  1. Store the peanut butter balls in an airtight container in the fridge for up to a week, or freeze them for longer storage.

Notes

  • Use natural peanut butter with just peanuts and salt for the best consistency.
  • Don’t skip chilling the mix—it makes rolling way easier and less messy.
  • If your mix is too dry, add a spoonful of peanut butter. If too wet, toss in more oats.
  • These are super freezer-friendly, so double the batch and save some for later!
