Ingredients
  

  • 1 cup Medjool dates pitted
  • 1 cup mixed nuts almonds, walnuts, cashews, etc.
  • 1/2 cup rolled oats
  • 1/4 cup nut butter optional
  • 1 tablespoon chia seeds or flaxseeds optional
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Cacao powder or shredded coconut for coating optional

Method
 

  1. In a food processor, combine the pitted dates, mixed nuts, rolled oats, nut butter (if using), chia seeds (if using), vanilla extract, and a pinch of salt. Pulse until the mixture becomes sticky and well-combined.
  2. Using your hands, take small portions of the mixture and roll them into bite-sized balls. If desired, roll the balls in cacao powder or shredded coconut for an extra touch of flavor and texture.
  3. Place the energy balls in the refrigerator for at least 30 minutes to firm up. Once chilled, they’re ready to be enjoyed as a nutritious, energy-packed snack.

Notes

You can use any type of nuts you prefer—almonds, cashews, walnuts, or a combination work best. Feel free to add additional ingredients like dried fruit (cranberries, raisins) or spices (cinnamon, cardamom) for a personalized touch. If you don’t want to coat the balls in cacao powder or shredded coconut, they are still delicious on their own. Store any leftover energy balls in an airtight container in the fridge for up to one week, or freeze them for longer storage.
