Method
- Blend the Ingredients: In a blender, combine coconut milk, lime juice, honey or maple syrup, lime zest, and salt. Blend until smooth and well combined.
- Pour the Mixture: Carefully pour the coconut-lime mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert Sticks: If your molds allow, insert popsicle sticks into the center of each mold.
- Freeze: Freeze for at least 4-6 hours, or until completely solid.
- Unmold and Enjoy: To release the popsicles, run warm water over the outside of the molds for a few seconds. Enjoy your homemade coconut lime popsicles!
Notes
You can adjust the sweetness to your taste by adding more or less honey or maple syrup. For a vegan version, use maple syrup, and for keto, ensure to use a low-carb sweetener like stevia or monk fruit. If you prefer a thicker popsicle, you can add a bit more coconut milk or adjust the sweetness level to suit your preferences. Add a pinch of shredded coconut for added texture or mix in a little vanilla extract for a different flavor.
