Ingredients
  

  • 2 cups Medjool dates pitted
  • 1 cup walnuts or almonds or half of each
  • cup shredded unsweetened coconut plus extra for coating
  • 1 tbsp cocoa powder optional
  • 1 tbsp almond or peanut butter
  • Pinch of salt
  • Splash of vanilla extract optional
Optional Add-ins (choose one or mix):
  • Chia seeds
  • Ground cinnamon
  • Cardamom

Method
 

  1. Soak the dates
  2. If your dates feel dry, soak them in warm water for about 10 minutes. Drain well.
  3. Chop the nuts
  4. Put the walnuts or almonds in a food processor. Pulse until finely chopped (but not fully powdered).
  5. Add everything else
  6. Add the soaked dates, shredded coconut, cocoa powder (if using), nut butter, salt, and vanilla. Blend until everything sticks together. Scrape down the sides as needed.
  7. Shape the rolls
  8. Scoop out small amounts and roll them into tight balls or log shapes with your hands.
  9. Coat with coconut
  10. Roll each ball in extra shredded coconut until fully covered.
  11. Chill and enjoy
  12. Place the rolls in the fridge for 15–20 minutes to firm up. Eat cold or room temperature.

Notes

  • If the mixture feels dry, add a tiny splash of water or a bit more nut butter.
  • You don’t need to be perfect with measurements—this recipe is very forgiving.
  • These keep well in the fridge for 2 weeks or can be frozen for up to 2 months.
  • You can mix in extras like mini chocolate chips or protein powder.
  • Kids love these, especially if you let them help roll the balls.
