Classic Nova Scotia Blueberry Grunt with Dumplings

Fresh blueberries simmer into a thick sauce, then soft dumplings steam on top in the same pot for a one-pan Maritime dessert.

Ingredients
  

Blueberry Base
  • 750 g blueberries, fresh or frozen / about 4 1/2 cups
  • 100 g granulated sugar / 1/2 cup
  • 180 ml water / 3/4 cup
  • 1 tbsp lemon juice
  • 1/4 tsp ground cinnamon optional
Dumplings
  • 250 g all-purpose flour / 2 cups
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp granulated sugar
  • 45 g cold unsalted butter, cubed / 3 tbsp
  • 160 ml whole milk / 2/3 cup
To Serve
  • heavy cream or vanilla ice cream for serving; optional

Method
 

Make the Blueberry Base
  1. Combine the blueberries, 100 g sugar, water, lemon juice, and cinnamon in a 26 cm / 10-inch pot with a tight-fitting lid. Bring to a simmer over medium heat, stirring occasionally.
  2. Simmer uncovered for 8 to 10 minutes, until the berries have broken down and the liquid looks glossy and syrupy, coating the back of a spoon.
Make the Dumplings
  1. While the fruit simmers, whisk the flour, baking powder, salt, and 2 tbsp sugar together in a mixing bowl.
  2. Cut the cold butter into the flour with your fingertips or a pastry cutter until the mixture looks like coarse crumbs.
  3. Pour in the milk and stir with a fork just until a soft, sticky dough comes together. Stop as soon as no dry flour remains, overmixing makes the dumplings tough.
Steam and Serve
  1. Drop the dough by heaping tablespoons directly onto the surface of the simmering blueberries, spacing them apart. You'll get about 8 dumplings.
  2. Cover the pot tightly and reduce the heat to low. Steam for 15 to 18 minutes without lifting the lid, or the dumplings will turn gummy on top.
  3. Check doneness with a toothpick inserted into the center of a dumpling, it should come out clean with no wet dough.
  4. Remove from the heat and let sit, covered, for 5 minutes.
  5. Spoon the warm blueberries and dumplings into bowls and serve with heavy cream or a scoop of vanilla ice cream.

Notes

  • Simmer the blueberries until juicy and bubbling before adding dumplings, about 8 to 10 minutes.
  • Don't lift the lid during the 15 to 18 minute steam, or dumplings turn gummy.
  • Dough should be soft and sticky, not stiff, add milk a splash at a time if needed.
  • Serve warm the same day, dumplings soften and lose texture after chilling.
