Ingredients
  

Chocolate Layer:
  • 1 cup chocolate pudding store-bought or homemade
  • ½ cup chocolate yogurt
  • 1 tablespoon cocoa powder optional, for extra depth
Raspberry Layer:
  • cups fresh raspberries or thawed frozen raspberries
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon lemon juice
Cream Layer:
  • 1 cup vanilla whipped cream or coconut whipped cream for non-dairy option
  • 1 teaspoon vanilla extract
For Assembly:
  • ½ cup crushed brownies chocolate cookies, or granola
  • Extra raspberries and chocolate shavings for garnish

Method
 

Mix the Chocolate Base:
  1. In a medium bowl, stir together chocolate pudding, chocolate yogurt, and cocoa powder until silky smooth.
Make the Raspberry Mix:
  1. In another bowl, mash half the raspberries with honey and lemon juice. Keep the rest whole for layering later.
Prepare the Whipped Cream:
  1. Fold vanilla extract into the whipped cream. Keep it in the fridge while you prep other layers.
Layer It Up:
  1. Grab 4 small glasses or jars.
  2. Add crushed brownie or cookie crumbs at the bottom.
  3. Spoon a layer of the chocolate mixture.
  4. Add a layer of raspberry mash.
  5. Top with whipped cream.
  6. Repeat until full, ending with whipped cream on top.
Chill:
  1. Place the parfaits in the fridge for at least 30 minutes so the flavors can come together.
Garnish and Serve:
  1. Before serving, top with a few raspberries, chocolate curls, and maybe a drizzle of syrup. Enjoy cold.

Notes

  • For a lighter version, swap brownies with granola or oats.
  • You can make it the night before—just keep it chilled and add the toppings right before serving.
  • To make it vegan, use coconut yogurt and coconut whipped cream.
  • These parfaits are also great for breakfast if you skip the brownie and add honey yogurt instead.
