- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- Prepare the Brownie Batter: In a large saucepan, melt the butter over medium heat. Remove from heat and stir in sugar until well combined. Beat in the eggs one at a time, then mix in the vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually mix the dry ingredients into the wet mixture. Fold in chocolate chips and peppermint extract.
- Bake the Brownies: Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.
- Prepare the Frosting: In a medium bowl, mix together powdered sugar, heavy cream, and peppermint extract until smooth. Spread the frosting over the cooled brownies.
- Garnish and Serve: Sprinkle crushed candy canes on top. Cut into squares and enjoy!
Notes
For extra richness, use dark chocolate chips instead of semi-sweet. For a crunchy texture, add crushed peppermint candies to the batter. To store, keep brownies in an airtight container for up to 4 days.
