Ingredients
  

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ¼ cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Optional:
  • ¼ cup chopped walnuts or raisins

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. In a bowl, mix oats, flour, baking soda, salt, and all spices. Set aside.
  3. In another bowl, mix the butter and brown sugar until soft and creamy.
  4. Add maple syrup, egg, and vanilla. Mix until smooth.
  5. Add the dry ingredients to the wet mixture. Stir just until combined.
  6. Scoop tablespoon-sized dough onto the baking tray, leaving space between cookies.
  7. Bake for 10–12 minutes until edges are set but centers look soft.
  8. Let cookies cool on the tray for 5 minutes, then move to a wire rack.

Notes

  • Do not overbake. The cookies will firm up as they cool.
  • For softer cookies, remove them when the centers still look slightly underdone.
  • Rolled oats work best. Instant oats will make the cookies too soft.
  • These cookies taste even better the next day once the spices settle.
