Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
In a bowl, mix oats, flour, baking soda, salt, and all spices. Set aside.
In another bowl, mix the butter and brown sugar until soft and creamy.
Add maple syrup, egg, and vanilla. Mix until smooth.
Add the dry ingredients to the wet mixture. Stir just until combined.
Scoop tablespoon-sized dough onto the baking tray, leaving space between cookies.
Bake for 10–12 minutes until edges are set but centers look soft.
Let cookies cool on the tray for 5 minutes, then move to a wire rack.
