Method
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- Prepare the Crust: In a bowl, mix together oats, flour, brown sugar, baking powder, and salt. Add melted butter and mix until crumbly. Press half of the mixture firmly into the bottom of the prepared pan.
- Make the Blueberry Filling: In another bowl, combine the blueberries, granulated sugar, lemon juice, and cornstarch. Gently stir to coat the blueberries with the mixture.
- Assemble the Bars: Spread the blueberry filling evenly over the crust in the pan. Sprinkle the remaining crumble mixture on top of the blueberries.
- Bake: Bake for 30-35 minutes, or until the top is golden brown and the blueberries are bubbling.
- Cool and Serve: Let the bars cool completely in the pan before cutting into squares. Serve and enjoy!
Notes
You can swap the blueberries for other fruits like raspberries or blackberries for a different flavor profile. Use a gluten-free all-purpose flour blend in place of the regular flour to make this recipe gluten-free. Store any leftover bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. These bars are great served with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
