  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Method

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.

  3. Make the Blueberry Filling: In another bowl, combine the blueberries, granulated sugar, lemon juice, and cornstarch. Gently stir to coat the blueberries with the mixture.
  4. Assemble the Bars: Spread the blueberry filling evenly over the crust in the pan. Sprinkle the remaining crumble mixture on top of the blueberries.
  5. Bake: Bake for 30-35 minutes, or until the top is golden brown and the blueberries are bubbling.
  6. Cool and Serve: Let the bars cool completely in the pan before cutting into squares. Serve and enjoy!

Notes

You can swap the blueberries for other fruits like raspberries or blackberries for a different flavor profile. Use a gluten-free all-purpose flour blend in place of the regular flour to make this recipe gluten-free. Store any leftover bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. These bars are great served with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
