Black Forest Mousse Cups: Cherry, Cream, Chocolate

Layered no-bake dessert with dark chocolate mousse, a quick cherry compote, and whipped cream, set in individual glass cups.

Ingredients
  

Cherry Compote
  • 300 g pitted dark cherries fresh, frozen and thawed, or jarred, drained
  • 2 tbsp granulated sugar
  • 1 tbsp kirsch (cherry brandy) optional
  • 1 tsp cornstarch
  • 2 tbsp cold water
Chocolate Mousse
  • 200 g dark chocolate (60-70% cacao) chopped
  • 480 ml heavy cream divided
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 pinch fine salt
Topping
  • 120 ml heavy cream, whipped
  • 30 g dark chocolate, shaved
  • 6 fresh cherries with stems for garnish
  • cocoa powder for dusting; optional

Method
 

Cherry Compote
  1. Combine cherries, sugar and kirsch in a small saucepan. Cook over medium heat for 4 to 5 minutes until cherries soften and release their juice.
  2. Stir cornstarch into the cold water, add to the pan, and simmer 1 to 2 minutes until glossy and thick enough to coat the back of a spoon. Remove from heat and cool to room temperature.
Chocolate Mousse
  1. Melt chopped chocolate with 120 ml of the cream in the microwave in 20-second bursts, stirring between each, about 1 to 2 minutes total until smooth. Cool the ganache to room temperature, around 68 F/20 C.
  2. Whip the remaining 360 ml cream with sugar, vanilla and salt to soft-medium peaks, when the beaters lift and leave a peak that droops slightly at the tip.
  3. Fold the cooled ganache into the whipped cream in 3 additions, folding gently each time until no streaks remain and the mousse holds its shape on a spoon.
Assembly
  1. Divide the cooled cherry compote among 6 glass cups or jars, about 2 tablespoons each.
  2. Spoon or pipe mousse over the compote, filling cups about three-quarters full. Tap cups gently on the counter to settle any air pockets.
  3. Chill uncovered for 2 hours, or cover and chill up to 24 hours, until the mousse is set enough to hold a spoon mark.
  4. Before serving, top each cup with whipped cream, chocolate shavings and a fresh cherry. Dust with cocoa powder if using.

Notes

  • Let ganache cool before folding into whipped cream, or mousse turns soupy.
  • Drain cherries well, wet fruit waters down the compote.
  • Chill at least 2 hours before serving for a set mousse.
  • Assemble toppings just before serving so cream stays fresh looking.
