Austrian Rumkugeln Rum Chocolate Balls

Ingredients
  

  • 200 g 7 oz dark chocolate, finely chopped
  • 100 g 3.5 oz unsalted butter, softened
  • 150 g 5 oz cookie crumbs (or gluten-free cookies)
  • 50 g 1.7 oz chopped nuts (almonds or hazelnuts)
  • 3 –4 tbsp dark rum adjust to taste
  • 2 tbsp cocoa powder for rolling
  • 1 tbsp powdered sugar optional

Method
 

  1. Melt chocolate and butter: Place chopped chocolate and butter in a heatproof bowl over simmering water. Stir until smooth.
  2. Mix dry ingredients: Combine cookie crumbs and chopped nuts in a separate bowl.
  3. Combine ingredients: Pour melted chocolate and butter over cookie-nut mixture. Add rum. Mix until it forms a sticky dough.
  4. Shape balls: Scoop small spoonfuls and roll into walnut-sized balls.
  5. Coat: Roll the balls in cocoa powder or powdered sugar.
  6. Chill: Place on a tray lined with parchment paper and refrigerate for at least 1 hour before serving.

Notes

  • Use dark chocolate for the best balance with rum.
  • Can be made ahead and stored in the fridge for up to two weeks.
  • Substitute rum with coffee or vanilla extract for a non-alcohol version.
