Method
Preheat your oven to 350°F (175°C).
- Line a 9x13-inch baking pan with parchment paper, leaving some paper hanging over the sides.
- In a large bowl, mix flour, oats, brown sugar, cinnamon, and salt.
Add the cold butter cubes.
- Use your fingers or a pastry cutter to work the butter into the dry mix until crumbly.
Stir in walnuts if using.
- Press about two-thirds of the crumble mixture firmly into the prepared pan.
Bake the crust for 12 minutes.
- Remove from the oven and set aside.
- While the crust bakes, add apples, cranberries, sugar, lemon juice, cornstarch, vanilla, and cinnamon to a saucepan.
- Cook over medium heat for 8–10 minutes, stirring often, until the fruit softens and the filling thickens.
- Spread the warm apple cranberry filling evenly over the baked crust.
- Sprinkle the remaining crumble mixture loosely over the top.
- Bake for 35–40 minutes, until the top is golden and the filling is bubbling around the edges.
- Let the bars cool completely before slicing.
Notes
- You can use fresh or frozen cranberries. No need to thaw frozen ones.
- Let the bars cool fully before cutting. This helps them hold their shape.
- Store at room temperature for up to 4 days or refrigerate for longer freshness.
